MELK TERT (makes two)
PASTRY 2 cups flour 1 egg 125g (1/2 cup) butter 1/2 cup sugar 2 teaspoons baking powder . Rub butter into flour and baking powder. . Beat egg and sugar, add to flour. . Press into tins. Bake blind 15-20 minutes at 190oC (375oF) FILLING 3 1/2 cups of milk 2 tblsps flour 3 teaspoons vanilla essence 1 tblsp (20g) butter 2 tblsps cornflower 3/4 cup sugar 2 eggs . Boil milk and butter together. . Beat eggs and sugar very well. NOTE: MIX CORNFLOWER WITH A LITTLE COLD MILK TO AVOID LUMPING. . Add flour and cornflower, stir into boiling milk . Boil for a few minutes, stirring. . Remove from heat and add vanilla essence. . Pour into pastry shells. . Sprinkle with cinnamon. . Leave to set.
